Delicious waffles with peanut butter are a great idea for a lazy breakfast that you can prepare at the weekend or a sweet afternoon snack for the whole family. I really like waffles and recently I have been preparing them more and more often in various flavor variations. Waffles are a great idea to smuggle valuable products into our diet.
Preparation
Put the dates in a bowl and pour hot water over them for 10 minutes to soften. Then drain them. Separate the egg whites from the yolks. Put the rice flour, wheat flour and baking powder in a bowl. Mix the dry ingredients with a whisk. Add the soaked and drained dates, peanut butter, milk, oil and egg yolks to the dry ingredients. Using a blender, blend the ingredients until smooth. In another bowl, beat the egg whites with a pinch of salt until stiff. Gently mix the whipped egg whites into the nut and date mixture. Heat the waffle iron, using a silicone brush gently grease with oil. Pour in portions of batter (about 3 tablespoons of batter per waffle). Bake the waffles for about 2-3 minutes (the baking time depends on the power of the waffle iron).
Ingredients:
for 6-8 waffles
ingredients measured with a 250 ml glass
1 cup rice flour
1/2 cup plain flour
1/2 cup peanut butter
1/3 cup dates + 1/2 cup boiling water for soaking
1 and 1/2 cups of milk (plant-based, cow’s, lactose-free – any will be good)
3 large “L” size eggs
3 tablespoons rapeseed oil
1 teaspoon baking powder
pinch of salt
For garnish/to serve:
peanut butter
powdered sugar
Favorite fruits
dates, etc.
Transfer the baked waffles to a wire rack until slightly cooled. Then serve with your favorite toppings. I served waffles with peanut butter, fruit and powdered sugar.
